Spicy Chicken Fry



Chicken fried is a special and rare guest at home since it is not a healthy choice. It is special since it is relished. This is a spicy and easy recipe.

Spicy Chicken Fry

Ingredients

1.      Chicken (mix of breast and leg) or 1 whole chicken – 1 Kg

      2.     Spices to grind
a.       Whole chilly – 8 to 10
b.      Fennel seeds – 1 Tbspn  
c.       Coriander seeds – a few
d.      Pepper corns – 1 Tspn

Grind the above first

e.      Garlic – 5 cloves
f.       Ginder – a big piece
g.      Curd – 2 to 3 Tbspn

Grind the above with curd instead of water. Add enough salt.

   3.   Onions – 2 medium 
   4.   Curry leaves - plenty

Apply the masala to the washed chicken pieces that has been dried with a towel or tissue and leave it in the fridge for 1 hour or more.


Take a non-stick pan and pour 2-3 Tbspn of oil (I used coconut oil for the special taste) place the onions first and then the chicken. Cover the pan and let the water run. Put it in medium fire until the chicken is cooked. Stir it occasionally. I added a Tbspn of chilly sauce at this stage to enhance the taste. When the chicken is fairly cooked, take the lid off and fry it for a while. 


Enjoy with rice or roti. Don’t forget to have a bowl full of salad too to balance the meal.
